Product Description
This precious balsamic vinegar arises from Lodovico Campari's passion for Modena and its origins. Trebbiano grapes are picked at their peak ripeness and the must that is obtained is then left to ferment in open top vessels. Once the cooked must has reduced by two thirds, it is then put in oak barrels where it stands in the dark of the "attics".
From one year to another, Lodovico Campari's Balsamic Vinegar is transferred from one wood barrel to another, drawing distinctive and unmistakable aromas from each different kind of wood, from cherry to juniper. The Balsamico is then left to the generations experienced master tasters to decide its readiness.
The deep sapphire color, the limpidity, the thick velvety texture and the deep contrast between its initial sweet element and its final acidulous one, makes Campari's Aceto Balsamico one of the true jewels of Modena. It is perfect used as a condiment for meat, fish, vegetables and aged cheeses. For a unique and special treat, try it over strawberries and ice cream.
Each bottle contains 8.5 fluid ounces (250 ml.) of Aceto Balsamico di Modena aged 15 years by Acetaia L. Campari from Italy.

Not one of the better balsamics

This balsamic vinegar does not qualify for the designation of "Aceto Balsamico Tradizionale di Modena" though it's marketing seems to imply that it is Tradizionale. It's definitely better than supermarket balsamics but if you are investing in such an expensive product you should look at the silver or gold label Cavalli balsamic's which are wonderfull. Campari has a bitter aftertaste where both of the Cavalli vinegars have nice lush sweet initial taste with a nice acidic finish. Of course the Cavalli products are about twice the cost.

Superb Quality

I first tasted this at one of the top 4 olive farms in the US, while tasting olive oils. They had this bottle in the back, and told me that they use it sparingly (with ice cream and olive oil of course) but that it was the best they had tasted and was imported from Italy. It was great, so I ordered some on the spot from my phone. I would never normally pay this much for balsamic but it's top shelf and will last a very long time.

Depends on your palette

If you're used to supermarket balsamic vinegar then this stuff will be like nectar. It has the thickness you expect from 15yr old balsamic.But as I'm dipping my bread into this, I'm reminded on how much better a Maletti 25 year is, for similar money ($200 a liter). This stuff is harsh and bitter. Spend your money elsewhere.
